Christmas Baking- Christmas Tree Biscuits

Today I have got another Christmas baking post; this time Christmas Tree Biscuits. In my last Christmas baking post the cupcakes turned out really good and I was really happy with them; not so happy with the cookies.

I bought this 3D Christmas Cookie Cutter Set from Lakeland. It looked really good and I was so excited to use it. There is a recipe on the bake but I did not use that one as you had to let the dough chill for an hour and I did not have time for that. Instead I used this recipe

Ingredients

  • 200g butter
  • 200g caster sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • 400g plain flour

Method

  • Preheat the oven to 200°c and line baking trays with baking paper.
  • Beat the butter in a bowl then add the sugar, egg and vanilla. After these are combined add the flour and mix until it makes a dough.
  • Roll the dough out onto a floured surface. I used a little bit of dough at a time instead on using all of it as I found it a lot easier to roll.
  • I make my biscuits quite thick but you can do whatever thickness you want really.
  • Using the cookie cutter, use the smallest star to cut out a biscuit. Then carry on cutting two biscuits of each size star.
  • Bake in the oven for 12 minutes. I baked them for 14 minutes as they looked quite thick. You want them to just start turning golden brown

Decorating

I mixed some green gel food colour with Morrison’s ready to use royal icing. I also mixed some yellow food colouring with some of the icing to colour the star Then I did try to pipe the icing onto the biscuits (I managed on the first few) but I’m not sure why my piping bag wasn’t working. When I squeezed it nothing would come out the hole, there is a slight tear on the fabric so I feel like that might be the reason why.

So, instead I dripped icing on the cookies using a knife; personally I do not think they look too bad. I also sprinkled some Christmassy sprinkles on the top.

I found it too be a bit awkward stacking the biscuits as mine ended up quite lopsided and I had to try and stop it from falling over.

But as always, they are not the best looking but they taste really nice. They have a lovely butter, shortbread type of taste. Personally I think the individuals biscuits do not look that bad; it is the stacking that lets them down.
